Menu Monday: Beignets!

Alright, y’all-I’m gonna be real with you. The first time I ate beignets it was in New Orleans Square in Disneyland. They were goddamn delicious and they were shaped like Mickey Mouse. So as tomorrow is Mardi Gras, I made some delicious beignets to celebrate!

Ingredients:

  • 3/4 cup lukewarm water
  • 1/4 cup granulated sugar
  • 1/2 envelope active dry yeast
  • 1 egg
  • 1 teaspoon salt
  • 1/2 cup evaporate milk
  • 3.5 cups flour
  • 2 tablespoons shortening
  • vegetable oil
  • 1 cup powdered sugar

Directions:

  1. Mix water, sugar, and years in a large bowl. Let sit for 5 minutes.
  2. Whisk the eggs, salt, and evaporated milk together, then add yeast mixture.
  3. Slowly stir in the flour and shortening.
  4. Knead dough on a floured surface and then place in an oiled boil, cover with plastic wrap, and allow to rise for 2 hours.
  5. Pour oil in a sauce pan, and allow to heat.
  6. Roll out dough on a floured surface, and cut into 1-2 inch squares with a pizza cutter.
  7. Fry dough 4-5 at a time flipping continuously until browned on all sides. Allow to drain on a plate with paper towels.
  8. Place all beignets in a paper bag, top with powdered sugar, and shake well.
  9. Eat!
