Menu Monday: Spaghetti Squash Alfredo

Fall is here! In my house, fall is squash season because squash is delicious and in Oregon it is plentiful from our local farmers for cheap! This is a very easy spaghetti squash recipe that makes a filling dinner and is just delightful.

Ingredients:

  • 2 tablespoons butter
  • 3 cloves garlic
  • 1 cup shredded Parmesan cheese
  • 4 oz cream cheese (I used garlic and chive cream cheese)
  • 1 cup milk
  • 1 spaghetti squash

Directions:

  1. Cook your spaghetti squash however you see fit. I prefer the microwave. 
  2. While your spaghetti squash is cooking, you can begin making your sauce.
  3. Mince your garlic or press with garlic press, and sautee in butter in the bottom of your sauce pan.Image may be NSFW.

  4. Once garlic begins to brown, add cream cheese and milk, stir until smooth.
  5. Add in Parmesan, stir until smooth.Image may be NSFW.

  6. Season with salt and pepper to taste.
  7. Once your squash is done, shred it, and top with sauce.Image may be NSFW.
