Menu Monday: Easy Slow Cooker Apricot Chicken Tacos

These tacos are filling, delicious, and so quick to throw together! They are one of Vaughn’s favorite meals. This recipe feeds 2 tacos to 6+people

Ingredients:

  • Two chicken breasts
  • Bag of chopped “southwestern” salad mix
  • 1/2 cup apricot preserves
  • 1/4 cup teriyaki sauce
  • Tortillas
  • Optional: Cheese, Mango Salsa, Sour Cream to taste

Instructions:

  1. Place chicken breast in an oiled crock pot
  2. Mix together preserves and teriyaki sauce. It will be lumpy, that’s okay! Pour over chicken in the crockpot.
  3. Cook on low for 8+ hours.
  4. Shred chicken using two forks.

  5. Place in tortilla, top with salad mix, salsa, sour cream, etc.Image may be NSFW.
